For the turkey with caramelized plums first preheat the oven to 180 °C.
In the meantime, dice the meat and wash, seed and quarter the plums. In a very hot frying pan, brown the meat for 3 minutes and season with salt and pepper. Then place the meat in an ovenproof dish and put it in the oven for 4 minutes.
Deglaze the pan with Madeira, pour in the chicken soup and let it simmer for a few minutes until only half of the liquid remains. Season the sauce with salt and pepper and add a little butter.
For the plums, heat the sugar in a frying pan and let it caramelize until light brown. Add the plums to the pan along with a small knob of butter and toss well.
Arrange the turkey with caramelized plums on plates, drizzle with the sauce and serve the rest of the sauce separately.
