Cut the meat into pieces the size of an ice cube and place in a sufficiently large bowl. Add vinegar and soy sauce, a few black peppercorns and a pinch of ground pepper, mix everything heartily by hand, then add the cut bay leaf spice and sugar, finally add the water. Leave to stand for at least half an hour.

Then cook the mixture in a saucepan – without oil – for about half an hour to three quarters of an hour with the lid closed. The meat must be well covered with liquid, add water if necessary.

Shortly before serving, remove the meat from the marinade, drain and roast briefly in hot oil until brown, followed by another dip in the marinade mold.

Adobo is served with long grain rice.
