For the After Eight cookies, sift the flour and baking powder and mix with the cocoa. Preheat oven to 160 degrees hot air.
With a sharp knife, cut the After Eight slices into small pieces and mix with the sugar and butter. Then add the egg yolks. Finally, add the flour mixture and knead into a dough.
Leave to rest in the refrigerator for about 2-3 hours.
Then roll out the dough and cut out with the desired cookie cutter. Place on a baking sheet lined with parchment paper and bake for about 10-12 minutes.
If desired, decorate the After Eight cookies with icing or chocolate.

For that extra touch, you can add a little mint liqueur to the icing or chocolate used to decorate the After Eight cookies.
