Instructions:

Soak the beans overnight.

The next day, rinse the beans under running water, pouring away the soaking liquid.

Place dioe beans in a pot, cover with fresh water. Boil for about an hour. Pour off the cooking water and reserve.

Preheat the oven to 150 °C.

In a large enough pot over medium heat, brown, or render, the bacon, about 5 minutes. Add the onions and garlic, and continue to cook, stirring, for about 5 to 10 minutes.

Add the sugar and stir until it dissolves. Stir in the remaining ingredients, adding the beans at the end.

If the beans are not completely covered, add some of the reserved cooking water until they are covered again.

Place the pot with lid in the oven and bake for about 2 1/2 hours. Keep stirring during this process.

Add about 250 ml of the cooking water, stir, and bake without the lid for about 15-30 minutes more, until the sauce is thick and syrupy.

Arrange the beans and serve.

Preparation Tip:

As a variation, you can also replace some of the ketchup with BBQ sauce.
