Instructions:

For the almond marzipan towers, mix pistachios and breadcrumbs. Grease 4 ramekins with a little butter and sprinkle with pistachio and breadcrumb mixture.Preheat oven to 170°C.Separate eggs. Stir marzipan with one egg yolk until smooth.Cream butter with powdered sugar, vanilla sugar and lemon zest. Add the egg yolks. Stir in marzipan mixture, rum and ginger.Beat egg whites until stiff and fold into the mixture. Mix flour and almonds and fold in. Pour mixture into ramekins and bake for about 35 minutes.Turn cake out of ramekins and let cool.For garnish, beat egg whites with sugar over steam until warm. Cut the almond-marzipan turrets once, fill with snow mixture, assemble and decorate with snow.Preheat oven to 200°C top heat. Place the towers on a baking tray and bake in the oven for 8 minutes until golden brown.
