For the glaze:

Instructions:

Put the flour, sugar, baking powder, baking soda, salt and chai spice in a bowl. Add the butter in small pieces and knead with the dough hook of the hand mixer until crumbly.

Add the buttermilk, vanilla extract and egg and continue kneading until just combined.

Peel, quarter, core and dice the apple. Immediately fold into the dough.

Preheat the oven to 200 °C top/bottom heat (180 °C convection oven).

Spread baking paper on a baking tray, place the dough in a ball on it (it is quite sticky). With floured hands, flatten the ball and cut into eight equal parts. Pull the pieces apart a bit because the scones will rise, otherwise they will stick together after baking.

Brush with a little whipped cream and sprinkle thinly with brown sugar. Bake in the preheated oven for 20-25 minutes until golden brown.

Mix the ingredients for the glaze together and brush the scones with it while they are still warm. Please enjoy fresh.

Preparation Tip:

Make chai mixture in stock and put in a spice jar: 4 tsp ginger powder, 4 tsp cinnamon powder, 2 tsp cardamom, 2 tsp allspice, 1 tsp clove powder, 1 tsp nutmeg powder, ½ tsp ground pepper.
