Remove peel from apples, quarter, core, slice. Bring to a boil with water and lemon peel, cook on 1 or automatic cooking plate 4-5 until soft, mash, season with sugar, juice of one lemon and white wine, bring to a boil again. Mix the cornflour with a little cold water, add to the apple soup, add the raisins and bring to the boil.
Bring to the table hot or cooled. Add macaroons if desired.
