For the apple tiramisu with mascarpone cream, separate the eggs. Beat the egg whites with a pinch of salt until stiff. Whip the egg yolks, sugar and 2 tablespoons of water until thick and foamy and fold in the flour and beaten egg whites.

Preheat oven to 180 degrees. Spread the dough on a baking tray lined with baking paper, bake for about 10 minutes and let cool.

Beat mascarpone, curd, milk and sugar until fluffy. Cut out glass-sized circles from the sponge cake. Place a circle of dough in each glass (6 glasses) and drizzle with some apple juice.

Pour some applesauce on top, cover with mascarpone cream and jam. Repeat process until all ingredients are used up, then refrigerate for 1 hour.

Wash, halve, core and cut apple into wedges. Decorate glasses with them and sprinkle cocoa powder on top.
