Preheat the oven to 180 degrees.

Rinse the duck legs, dry them, season with salt and pepper. In a roasting pan, sear on both sides in clarified butter. Pre-cook in the oven for about thirty minutes with the skin side up.

Peel the apples, cut into quarters and remove the core, cut each apple quarter in half again. Cut the peppers in half, remove the stem and the core, rinse the peppers and cut them into strips. Rinse the thyme and shake dry. Skin the garlic and crush with a kitchen knife.

Remove the duck legs from the roaster and set aside, pouring off the rendered fat. Caramelize the sugar in the roaster and extinguish with the apple juice.

Add thyme sprigs, apple, paprika, garlic and clear soup. Place the duck legs on top, skin side up, and cook for about twenty minutes. The liquid should be almost boiled down.

Remove the thyme sprigs and bring the duck legs to the table in the roasting pan.
