For the banana pockets, divide the puff pastry into 15 squares, peel and slice the bananas, place a thick slice of banana in the middle of each pastry square, and press the opposite corners of the pastry together over the banana slice to make small pockets.
Cover a baking tray with baking paper and bake the banana pockets in the preheated oven at 200°C for 20 minutes until light brown.
