Instructions:

Trim the liver (remove tendons and skin), cut into 2 cm strips and pepper.

Peel the pear, cut in half and remove the core. Cut pear halves into slices. Peel onion and cut into rings.

Heat clarified butter in a heavy pan and brown the liver pieces in it. Stir constantly. Remove and keep warm.

Fry the onion rings in the gravy. Add sugar to the pan and let it melt. Add pear pieces and brown all around.

Salt the liver and serve with the pear.

Preparation Tip:

Salt the liver only after frying, otherwise it will be tough!
