Instructions:

Peel the carrots. Cut 2 carrots into narrow slices and cut out figures (e.g. stars, hearts, etc.) from them using small cookie cutters. Set aside. Cut the remaining carrots into small slices.

Peel and finely chop the shallots.

In a medium frying pan, melt the butter. Sauté the onions in it. Sprinkle curry on top and fry briefly so that it releases its aroma.

Add Noilly Prat and chicken soup. Add the carrot slices and cook until soft with the lid closed.

At the same time, cook the carrot stars in a little salted water until al dente. Strain and set aside.

Blend the softly cooked carrots in the soup with a hand blender or until creamy.

Add cream and ground coriander and bring soup to a boil again. Season to taste with salt and pepper.

Divide the hot carrot soup into preheated soup plates or cups and add the carrot stars on top. Decorate with parsley or coriander leaves to taste.
