Rinse carrots, remove peel and grate coarsely on a vegetable grater. Remove the peel from the shallot and chop finely. Rinse parsley and chop finely.

Melt butter in a saucepan, sauté chopped shallot for 2 to 3 min until translucent, add parsley, grated carrots and raw cane sugar and toss the whole thing in the closed saucepan for about 5 min.

Gradually pour vegetable soup and stew for another 10 to 15 min with the lid closed until soft.

Remove rind from whole wheat bread and crumble in a blitz chopper. Stir bread crumbs into soup. Rinse dill and chop finely.

Season carrot soup with spices, whipped cream and dill. Whisk everything finely with a blender and serve.
