For the chanterelle egg dish, clean the chanterelles and cut into bite-sized pieces. Finely chop the parsley and onion. Heat oil in a pan and sauté the onion.
Crack eggs and whisk well. Pour eggs into pan and spread chanterelle on top. Fry for 5 minutes, tossing occasionally. Finally, stir in the parsley.
