For the chicken noodle soup, bring the chicken broth to a boil in a saucepan. Add chicken breast fillet whole and simmer gently in the broth for 20 minutes. After 10 minutes, add the pasta.

Just before the pasta is al dente, gently beat the eggs in a bowl and slide them into the soup. Add the arugula. Remove chicken from broth and cut into small pieces. Add back into the soup.

Briefly toast breadcrumbs in olive oil. Arrange soup on plates and sprinkle with Parmesan cheese and bread crumbs. Season the chicken noodle soup with salt and pepper.

Preparation Tip:

You can add croutons to the chicken noodle soup instead of bread crumbs.
