Butter a gratin dish. Preheat the oven to 180 degrees.
Clean the chicory and cut it in half lengthwise, removing the bitter core in a wedge shape. Wrap each half with a slice of ham, place one against the other in the prepared dish, season carefully with salt and season with pepper. Stir the double cream with the chicken stock in a small baking dish and pour over the chicory.
Melt the butter in a small frying pan and toast the breadcrumbs in it until golden. Transfer to a plate and cool. Stir in both cheeses and the chopped parsley. Sprinkle the breadcrumb-cheese mixture over the chicory and top with the butter flakes. Bake the gratin in the heated oven for about 20 minutes until golden brown.
