Instructions:

Parfait: Beat egg and sugar over steam until warm and thick. Beat the egg whites with sugar also over steam until warm and cold. Stir the whiskey and whiskey liqueur into the egg mixture, mélange (= fold in) the beaten egg whites and fold in the whipped cream. Pour the mixture into portion molds and freeze for about 6 hours. It is best to prepare the parfait the day before. Whiskey sauce: caramelize sugar with water, deglaze with orange juice and reduce to about 1/4 over low heat. Add cornstarch to bring to desired consistency. Add the Chivas and strain the sauce through a fine sieve. Arrange the fruit on a large plate. Invert the soufflé into the center of the plate. Cover the fruit with the sauce. Garnish with mint leaves and sprinkle with powdered sugar.
