Instructions:

Beat eggs and granulated sugar until very foamy. Mix flour and cocoa and fold in – finally stir in the oil. Pour into a greased and floured cake pan and bake at 160 °C for about 35 minutes – let cool.

For the cream, whip the cream until stiff and chill. Beat egg and yolk with granulated sugar and vanilla sugar over steam until creamy – remove from steam and beat until cold.

Melt chocolate over steam, mix with 1/3 of egg mixture, 1/3 whipped cream, coffee and brandy. Fold in remaining whipped cream and cream. Spread the cake base with jam. Pour cream on top and smooth it down.

Chill in refrigerator for several hours (or overnight). Spread with stiffly whipped cream and sprinkle with chocolate chips.

Preparation Tip:

If you like, add fresh berries as a decoration to eat on top and around the chocolate mousse cake.
