For the coconut biscuits, beat the egg whites with the salt until stiff. Add lemon juice and sugar, fold in coconut flakes. Preheat oven to 160°C convection oven.
Place approx. 30 baking wafers on a baking tray. Using a coffee spoon, place small heaps of the coconut mixture on the wafers and bake for 13-15 minutes until light and firm.
Preparation Tip:
You don't necessarily need baking trays, of course; a tray lined with baking paper is fine, too.
