For the dandelion honey, wash the dandelion flowers well.

Slice the lemon and boil it together with the dandelion and the water for 15 minutes.

Cover with a tea towel and let steep for 24 hours. Filter the juice through a cloth, and squeeze the flowers well.

Simmer the juice together with the sugar for 2 hours on medium heat. Stir again and again.

Pour the still hot honey into screw jars, and turn upside down.
