A great cake recipe for any occasion:

Pit and finely chop the dates. Crush almond kernels with 2/3 of the sugar in a mortar or grind in a hand mixer. Melt the butter.

Preheat the oven to 230 °C.

Separate the eggs into yolks and whites.

Beat the yolks with the remaining sugar and the pulp of the vanilla pod until creamy. Stir the cornflour, dates, almonds, melted butter and Cointreau into the egg yolk mixture.

Whip the egg whites to stiff peaks and fold into the date mixture.

Butter a 26 cm dia. cake springform pan, pour in the date mixture and bake in the oven on the middle shelf for 20 minutes.

Then switch the oven to 200 degrees and bake the cake for another 10-15 minutes.
