Instructions:

If fresh coconut is not available, mix 0.2 liters of coconut with 0.2 liters of water in a hand mixer until the mixture thickens. Filter the mixture through a muslin cloth. Cut the fish fillets into morsel-sized pieces and place them in a shallow baking dish, pour lime juice over them until the fish is covered.

Salt and sprinkle with white pepper. Using your hands, repeatedly turn the fish pieces in the lime juice to the other side.

Cover the dish with a dishcloth and let it sit in a warm place for at least 6 hours. The fish is now “cooking” in the acid. The warmer the climate, the faster this happens.

Then pour off the lime juice and gently squeeze the fish pieces.

Pour the coconut milk over the fish, garnish with halved spring onions and peppers cut into strips.
