For the forest grain bread with yogurt, heat the buttermilk and dissolve the yeast in it. Briefly toast the oat flakes, oat groats, flax seeds and sunflower seeds in a non-stick pan without adding any fat.

Add all ingredients, except for the pumpkin seeds, in the bowl of a food processor. Allow to knead well on high speed until the dough pulls away from the sides. Line a pot or glass bowl with a lid suitable for the oven with baking paper.

Preheat the oven to 200 degrees. Knead the dough well again on the work surface, if it is still too wet add enough flour so that the dough no longer sticks to your hands.

Form a loaf (round or oval) and put it in the pot. Brush the surface with lukewarm water, cut and sprinkle with pumpkin seeds (press a little).

Put the lid on and bake for about 60 minutes at 200 degrees. Do not remove the lid in between. After 60 minutes, remove the lid and bake again for 10 minutes, then the crust will be brown and crispy.
