Instructions:

For the fried plaice with herb potatoes, first dry the washed plaice well and season with salt and pepper. Cut the pancetta into very fine cubes and sauté with the shallots in a frying pan with a little clarified butter. Drain in a sieve and then mix with the breadcrumbs.

First roll the plaice in flour on both sides. Mix the eggs with the mustard. Turn the plaice in it. Then drain briefly, add to the bacon crumb mixture and coat in breadcrumbs.

Fry the breaded plaice with the garlic in clarified butter for 5 minutes on each side until golden brown. Add a little butter.
