For the grape-mango cream, rinse the grape berries, pat dry with kitchen roll, cut in half with a pointed knife and remove the seeds. Remove the skin from the mango. Cut the flesh in thick slices from the stone and dice.

In a bowl, mix yogurt and sugar. Whip the cream until stiff and stir it in. Perfume with the rum. Add the mango and grapes and mix well. Refrigerate the cream until serving.

Lightly toast the almond flakes in a dry frying pan without adding any fat. Sprinkle over the grape-mango cream and serve.

Preparation Tip:

Use a yogurt with a higher fat content for the grape-mango cream tip!
