Instructions:

For the grape nut slices, first prepare the dough. To do this, beat the egg whites with the sugar until stiff. Mix the breadcrumbs, hazelnuts and the pulp of the vanilla pod.

Preheat the oven to 180°C.

Mix the egg yolks into about a third of the beaten egg whites and fold in the breadcrumb and nut mixture. Now carefully mix the remaining beaten egg whites into the mixture.

Line a baking tray with baking paper and spread the nut dough on it. Bake the dough for about 12 minutes, remove and let cool.

For the cream, heat the rum and lemon juice, dissolve the gelatine in it. Mix the yogurt with the sugar and incorporate the gelatin. Fold in the whipped cream. Spread the yogurt cream on the sponge cake base and let it cool for about 1 hour.Once the cream is firm, wash and halve the grapes and place them cut side down on the cream. Cover with cake jelly and let cool.

Once the jelly has set on the grape nut slices, serve the grape slices.
