For the grayling steamed on zucchini, season the grayling medallions and drizzle with the lemon juice. Mix the Grüner Veltliner with the fish stock, add the remaining ingredients to the stock and bring to the boil once.

Remove the skin from the cherry tomatoes and add them to the Veltliner stock with the grayling, zucchini and shallots. Then continue to simmer gently until the grayling and zucchinis are cooked (about 8 minutes).

Sprinkle with freshly chopped basil, serve the grayling with the zucchini & tomatoes in a deep dish with a little broth.

Preparation Tip:

When it comes to zucchini, the smallest ones taste the best. Large zucchini usually taste fibrous and boring. They are most suitable for stuffing.
