Instructions:

For the green cake, first prepare the dough.

For the dough, knead the flour with butter and lard. Add 100 ml of lukewarm water by the spoonful.

Knead everything together with the salt to make a smooth dough. Leave to rest for 30 minutes.

For the filling, wash the spinach and cut into strips. Peel and finely dice the onion. Clean the mushrooms and cut into slices.

Cut the anchovies into small pieces. Heat the oil in a pot and roast pressed garlic cloves together with onion.

Add spinach, mushrooms and peas, steam everything for about 10 minutes and then let it cool down. Meanwhile, preheat oven to 200 degrees.

Grease springform pan (26 cm) and divide dough into 3 equal parts. Knead two parts again, roll out into a circle and line the bottom and sides of the springform pan with it.

Mix anchovies and curd into the vegetable mixture, season and spread on the dough base. Roll out the third part of the dough to the size of the springform pan and cover the cake with it.

Press the edges together and prick the pastry lid several times with a fork. Whisk the egg yolk with 1 tablespoon of water and brush the cake with it.

Bake the green cake for about 30 minutes.

Preparation Tip:

The green cake tastes good even without anchovies.
