Finely grate cheese. Set aside one third of cheese. Unroll dough and divide into the pre-marked triangles. Sprinkle each with cheese and top each with 1 slice of ham.
Roll up dough triangles from wide side and shape into croissants. Mix egg yolks and whipped cream. Brush croissants with it and sprinkle with remaining cheese.
Place 6 croissants on a baking tray covered with parchment paper. Bake one after the other in the heated oven (electric oven: 200 °C / convection oven: 175 °C / gas: level 3) for 12-15 minutes.
