Instructions:

Hard boil egg, rinse, peel and finely chop. Wash parsley and chop finely as well.

Mix curd cheese with crème fraîche and egg salad until creamy. Mix in curry powder, chopped egg and parsley. Season the filling with salt and pepper to taste.

Carefully unfold and place ham slices on top: For simple ham rolls, spread a little filling in the bottom third of each ham slice and roll them up into tight rolls.

For braided ham rolls (see photo), using two small spoons, spread a small amount of the egg curry filling lengthwise (i.e., vertically) down the center of each ham sheet. Cut the ends of the ham to the left and right of the filling into even strips – cutting all the way through to the filling. Fold top and bottom ham ends over filling. Now fold left and right strips alternately over center of filling – they should overlap.

Arrange decoratively on a serving platter and serve.

Preparation Tip:

Ideal leftover food for remaining egg salad or spread.
