Instructions:

Unfold meat and sprinkle with juice of one lemon. Season with salt and pepper. Mix minced Parmesan cheese, sage, parsley, olive oil, crushed garlic and diced onion. Spread on the meat. Top with Parma ham. Roll up the meat and tie with kitchen tape.

Fry in hot oil until brown all over. Add wine and parma pulp and stew for 40 minutes with the lid closed.

Remove the meat. Boil the braising liquid by half and stir with crème fraîche. Season with salt and pepper.

Additional information is calculated for 5 servings.

Macaroni goes well with this.
