Instructions:

Rinse kale properly, removing woody stems and yellow leaves. Drop kale, dripping wet, into a large saucepan over medium heat. Remove and drain. Dice onion, celery and half the apples and sauté in olive oil. Add kale and clear soup and steam in covered saucepan until tender, 15 minutes. Season with salt, pepper and mustard. Pour into a greased ovenproof dish.

Cut peeled potatoes into small pieces and cook until soft. Mash with a potato masher, fold in egg yolks and crème fraîche and beat with a whisk until fluffy.

Season to taste with salt and freshly ground pepper. Pour mashed potatoes on top of the kale form. Cut the remaining apples into wedges and tuck into the mashed potatoes. Knead almond kernels or breadcrumbs and butter together and sprinkle on top of apples.

Bake in the heated oven at 200 degrees / 175 degrees convection / gas mark 3 for about 20 minutes.

Replace sour cream or crème fraiche.
