Instructions:

Cut the leek into pieces of about 5 cm, cut them in half lengthwise and rinse them briefly after they have cooled, making sure that they fall apart as little as possible.

Heat the butter in a wide frying pan. Pour in the leek halves and sauté briefly without turning to the other side. Pour in the white wine, season the leeks lightly with salt and steam for ten minutes over medium heat with the lid closed.

In the meantime, for the spiced bulgur, sauté all the garlic, onions, spices and ginger in butter. Add bulgur, saute until tender. Extinguish with about three quarters of the soup, bring to a boil. Cover and simmer at low temperature for about 15 minutes, adding soup if necessary.

Pour cream over leek vegetables and cook on low heat for another five minutes. Season with salt, pepper and a pinch of nutmeg.

Offer spiced bulgur with the leek vegetables.
