Instructions:

Preheat oven to 200 °C.

Wash leeks and cut in half lengthwise. Bring water to a boil in a pot, salt lightly and blanch leeks in it for 4 minutes. Remove leeks with a sieve scoop and briefly hold under cold water. Drain. Cut raw ham into thin strips and wrap around leeks.

Mix milk with yolks, whipping cream, salt, pepper and nutmeg. Brush a gratin dish with butter, place the leeks in it and pour the yolk milk over it.

Mix breadcrumbs with parmesan and spread over leeks. Heat the butter and pour it over the leeks.

Bake the gratin in the oven for about 20 minutes.

Meanwhile, cook tender wheat according to package. Then fold in parsley and serve leeks together with the tender wheat on two plates.
