Instructions:

For the lunchbox you will find below 2 bagel variations with bean paste.

For the bean paste, first puree beans with the other ingredients in a hand blender and season. This will yield about 400 ml. The bean paste will keep in a tightly closing can for about 3 days in the refrigerator.

For the bagel with brie, cut 2 bagels in half, toast and spread with 2 tablespoons of bean paste. Place coarsely shredded arugula on top and finish with brie slices. Top with strips of bell bell pepper and cover with second bagel half.

For the garden egg bagel, cut 2 onion bagels in half, spread with 2 tablespoons bean paste. Top with lettuce leaves. Cut hard-boiled eggs into slices and spread evenly on bagel. Place a few slices of cucumber on top. Sprinkle grated carrots on top. Drizzle some Italian salad dressing on top. Cover with the top half of the bagel.

Preparation Tip:

You can vary the bagels for the lunchbox as you like. By the way, they also taste good with hummus.
