If necessary, pound the beef patties a little thinner with a rolling pin or meat tenderizer and cut in half as desired.

Chop the parsley and basil. Pluck the thyme leaves from the twigs. Whisk together with the mustard, olive paste (1) and oil to make a marinade. Spread on the cookies and let sit for at least an hour, but preferably longer.
