Tartar:
Finely dice maties, chop capers, anchovy fillets and cornichons, mix with maties. Add mustard, tomato ketchup and cognac. Season tartare with sugar and juice of one lemon, arrange small dumplings on spoons.
Curry cream:
Stir sour curry, whipped cream, yogurt, salt, juice, fold in mango, arrange matie pieces on sauce, garnish with mango sticks.
Apple Rösti:
Mix apple rashers with sugar and butter, portion, dry in stove at 80 degrees, arrange matie pieces on rösti.
Tip: Use creamy natural yogurt for an even finer result!
