For Mediterranean oven vegetables, slice the melanzani, salt, set aside and let sit.

Cut the rest of the vegetables into pieces/cubes/slices about the size of a bite, depending on your preference, and place in a large plastic bowl.

Then wipe the melanzani with a paper towel and cut as well and add to the rest of the vegetables. Mix all the spices together with a very generous drizzle of olive oil and spread over the vegetables.

Add the fresh herbs and mix neatly by hand. If the vegetables seem too dry you can add more olive oil. The vegetables should be nicely moistened.

Spread everything on a deep baking tray and place in the preheated oven (180 °C hot air). Mix the vegetables 1 -2 times during the cooking process.

Depending on the oven and the size of the vegetables, the cooking time is 30-45 minutes. It is important that the potatoes are well done.

Mediterranean oven vegetables are best eaten with lettuce, yogurt sauce and / or Ajvar. Of course, it also goes wonderfully with fish and meat.
