For the mushrooms with lamb stuffing, clean the mushrooms dry. Remove the stems by turning them, chop the stems. Line a baking tray with baking paper and place the mushroom heads on it.

For the stuffing, finely chop the onion, garlic, thyme leaves and sage leaf. Dice the tomato.

Heat olive oil in a pan and fry the onions until golden. Roast garlic and herbs briefly. Mix the roasted onions and minced meat with the tomato cubes, egg and crème fraîche, season with salt and pepper. Fill the mushroom heads with the mixture. Bake in the preheated oven at 180 °C for about 20 minutes.
