For the nut-cinnamon buns, mix the hazelnuts well with granulated sugar, milk, cinnamon and vanilla sugar. Preheat the oven to 170°C top/bottom heat.

Take the puff pastry out of the refrigerator and process it immediately. Unroll the dough and spread with the filling. Roll up tightly from the long side and cut into 2 cm thick slices.

Brush with beaten egg and bake the nut-cinnamon buns lying on a baking tray lined with baking paper for about 25 minutes.
