For the Schmarren, mix the ingredients into a smooth batter and fold in the beaten egg whites.
Pour the batter into a pan and fry briefly for about 2 minutes. Turn and finish cooking in the oven at 160 °C hot air for 10 minutes. Then remove and tear using a pallet and 2-tine fork or cut into nice lozenges.For the mulled wine sauce, bring red wine, sugar and spices to a boil and bind with cornstarch.
