For the oxtail soup, rinse the oxtail pieces in cold water. Cut the celery into 5 cm long pieces, clean the carrot but leave it whole.

Peel the tomato, cut into quarters, pepper. Cut the onions. Heat the oil and brown the oxtail.

Add the celery and the onions, turn everything, add the garlic and the carrot, pour plenty of water and salt.

Let it simmer on low heat for 2 hours. Skim everything and strain through a sieve.

Put the oxtail pieces back into the strained soup, add the tomato pieces as well.

Do not boil again, just let it steep for 1/2 hour. Sprinkle the oxtail soup with dill and serve.

Preparation Tip:

The oxtail soup is a tasty soup and can also be quite sufficient when enjoyed as a main course. Best then serve with dark, or fresh white baguette or even with glass noodles. If you don't like dill, garnish the soup with fresh parsley or chives.
