Instructions:

Open the oysters and run the oyster water through a coffee filter. Place in a bowl and whisk with yolks and crème fraîche over steam until foamy. Add salt, pepper and chopped herbs. Coat the oysters with the cream and gratinate in the preheated oven at 250 °C top heat for a maximum of 5 minutes until golden brown.

Preparation Tip:

This is ideally accompanied by a fine blanc de blancs or other genuine French champagne.
