For the pancakes, stir together salt, egg yolks, flour and milk until a dough forms. Add just enough milk until the dough is liquid.
Whip the egg whites to egg whites and add to the batter. Heat oil in a non-stick frying pan and pour a ladleful of batter into each pan. Fry the pancakes a little at a time.
