For the Parisian potato gratin, first boil the potato until soft, then peel and press through a potato ricer. Mix together with the butter, one egg yolk, whipped cream and grated cheese and season with salt and the remaining spices.

Now preheat the oven to 200 °C and butter a baking dish.

Beat the white of one egg until stiff, fold it into the potato mixture and spread everything into the baking dish.

Then, using a damp spoon, press 5 holes into the mixture and break a raw egg into each of them. Season them with a little salt.

Now mix the cheese with the wholemeal crumbs, sprinkle over the casserole, leaving out the yolks, and top with the butter flakes. Bake the Parisian potato gratin on the penultimate rack for about 20 minutes, until the egg whites are firm and the yolks are still a little soft.
