For the pectin test, quickly mix the pectin with methylated spirits in a bowl. Wait until it has thickened. A large, compact, and cohesive lump/lump indicates a high pectin content.
If there are several small knots/lumps, the pectin has a low pectin content. Then boil again bubbling until the sample gives a large lump/lump (about 10 min steps).
Or use more pectin in jam making.
Preparation Tip:
CAUTION: methylated spirits are toxic! Please rinse the sample bowl immediately with boiling water and rinse! Or a sample jam to estimate the pectin content , cook quite conventionally and judge after the gelatinization test.
