Instructions:

For the pelmeni, first heap the flour on the work surface for the dough. Make an indentation in the center. Mix the eggs with water and salt, pour into the indentation and mix with the flour. Knead it into a firm dough. Let the dough rest for about 20 minutes.

Then knead the dough and roll it out thinly. Cut out circles of about 5 cm ø.

For the filling, peel and finely chop the onion. Finely chop the parsley as well. Mix both with the minced meat and the water, add salt and pepper.

Put some filling in each of the dough circles and then fold them into crescents. Tape the pointed ends together (similar to tortellini).

Bring a large pot of water to a boil and add salt. Cook pelmeni in it for about 10-15 minutes. Lift out and drain.

Serve pelmeni with sour cream and chopped chives.

Preparation Tip:

Uncooked pelmeni can be frozen and in this way will keep for several months.
