For the penne all’ arrabbiata blanch 4 tomatoes. Slightly incise the tomato skin, put it briefly in boiling water until you can loosen the skin at the points of incision, then put it in cold water to stop the cooking process. Remove the skin and seeds and cut the tomato flesh into very small pieces.

Cook the pasta. Heat oil in pan and sauté finely chopped onion. Then add the tomato cubes, garlic cloves and chili peppers. Cook until a creamy tomato sauce is formed. It takes about 20-30 minutes for this quantity. Add salt and pepper at the very end of the sauce.

Finally, mix the sauce and the penne (or other pasta) and finish the penne all’ arrabbiata with basil leaves or Parmesan cheese.

Preparation Tip:

Better to use less chili peppers at the beginning for the penne all' arrabbiata than too much!
