Penne with Baby Spinach and Cherry Tomatoes

Instructions:

Roast cashews in a heated pan without fat and set aside.

Cook pasta in a large pot of salted water until al dente and then strain.

Cut shallots into fine strips and halve cherry tomatoes. Sauté both in a little olive oil.

Pour in the almond milk, bring to the boil and season with salt and pepper. Simmer for 2-3 minutes over medium heat.

Stir in baby spinach and half of the parmesan and mix with pasta. Sprinkle toasted cashews on top.

Arrange on plates, sprinkle with remaining Parmesan and serve.

Preparation Tip:

It also goes well with a few thinly sliced prosciutto.
