For the vodka sauce, halve the chili and bell bell pepper, remove the seeds, cut the chili into very fine rings and the bell bell pepper into fine strips. Finely chop the spring onions and bacon and sauté both in a little olive oil as slowly as possible. Chop garlic and add together with chili rings and bell pepper strips.

Stir in tomato paste and anchovy fillets, sauté briefly and deglaze with a strong shot of vodka. Add tomatoes, breaking them up as you go, pour in a little soup and reduce well.

Add whipping cream, season with salt and pepper. Let the sauce boil down until creamy.

Meanwhile, cook the penne in plenty of salted water until al dente, rinse with cold water and strain. Mix in the pasta and, if necessary, add a little more cream or soup.

Mix well, season again and serve on warmed plates.

Sprinkle with freshly grated Parmesan cheese and basil leaves.
